Crispy Peanut Butter Bites

I have to share this fantastic, incredible, outstanding, outrageous, delicious, awe inspiring,   phenomenal, yea phenomenal that is the word that describes this crispy peanutty goodness bites.

It was hot, hot , hot this weekend.  I am so over it, bring on the chili, soup, and stew I am ready for fall.  I am sick of roasting my tail off whenever we go outside.  Anyway Prince Charming wanted something sweet this is how the conversation went:

Prince Charming, “I need chocolate”

Me, “Ok”

Prince Charming,  “We should bake cookies or brownies”

Me with the look of you have got to be kidding “It is too hot to make cookies”

Prince Charming, “But I want chocolate

Me “But it is too hot”

Prince Charming, “But I want cookies”

and SOOOOO

Here comes Crispy Peanut butter Chocolate cookie bites.  You might say Prince Charming won the debate but alas these peanutty treats are no bake baby!  Score one for the Princess!

These are super simple but oh so good.  Everyone says they like the ones I completely covered in chocolate best but they are great either way and I was running low on chocolate so that is what you get!

1 (18 ounce size) jar of peanut butter
2 cups Rice Krispies cereal
1 1/2 cups powdered sugar
1/4 teaspoon vanilla extract
1 cup chocolate chips

In a double boiler over low heat, melt chocolate and set aside You can also use the microwave if you don’t want to heat up the house. In a medium sized bowl, combine all other ingredients. Blend well until mixture forms a dough. It is really sticky but just keep working it until it becomes a nice dough. Roll into 1-inch balls. Here is a little tip if you keep your hands a little damp and wash them often rolling these will be a lot easier! Using a toothpick or fork, dip the balls into the chocolate until well coated. Place onto a cookie sheet lined with wax paper. Refrigerate for 30 minutes.
